Chef Andy Arndt's Zucchini Tapanade

Zucchini tapenade
Recipe serves four as a light appetizer course
Quantity and Ingredients
1 pound Zucchini squash diced into 1/8” brunoise
4 each Large garlic cloves, peeled
5 branches Fresh Thyme
1/2 cup Extra virgin olive oil
½ cup Green olives, pitted and chopped
1 each Lemon, zest removed with a rasp, juiced
1 each Filet of salted anchovy or 1 teaspoon anchovy paste
1 each Country style baguette cut into rounds ¼ inch thick
To taste Coarse sea salt and freshly ground pepper
Method
In a 12 to 14 inch sauté pan heat 3 Tablespoons of the olive oil until it begins to smoke. Carefully place zucchini, garlic cloves and thyme branches into the pan. Season to taste with salt and pepper. Cook on a high flame stirring constantly until the squash is colored. Remove from the heat and pick out and discard thyme branches. Place half of the squash, the garlic cloves, anchovy, lemon zest and olives into a food processor fitted with a steel blade. Process until coarsely pureed. Remove from the bowl and fold in the rest of the squash. Adjust seasoning and chill.

The Bees Knees
2 oz ORGANIC NATION gin
¾ oz organic honey Syrup
½ oz organic Lemon Juice
Combine all ingredients and shake with vigorously with ice, strain into a chilled Martini glass. Optional: Rim glass with lemon and sugar.
Not too sweet, not too tart. * Honey Syrup: Combine honey and water 1:1. heat until honey is dissolved , taste to make sure it is not too sweet. Cool. Can refrigerate up to a month or more.
